Colcannon Recipe

Diced redskin potatoes                

Kale                      

Garlic butter                      

Sour cream                        

Kosher salt                         

Pepper

Fill a pot with water and potatoes until the water line is even with the potatoes, add salt to water while boiling potatoes.  Cook for approximately 30-40 minutes or until potatoes are soft.  Water needs to fill 1/3 of the pot if there is more drain the excess water.  Add Kale and mash the potatoes while adding sour cream and butter.  Add pepper to taste.

 

Shepherd’s Pie Recipe

Ground beef 

Ground lamb

Roasted garlic pepper

Red onion

Celery

Carrots

Guinness beer

Water

Roast beef gravy mix

Brown equal parts lamb and hamburger in large skillet, when half cooked add the celery carrots and onions to soften. When meat is cooked and the vegetables are softened drain all the grease. Place meat in a medium sized pot over med high heat.

Mix the roast beef gravy into meat to let seasoning and gravy flavors bloom, approximately 5 minutes.  Add the Guinness and water to stew, heat to a boil .  When it starts to boil reduce heat to low and let simmer for approximately 15 minutes.         

Place the mixture in the a dish top with colcannon and shredded cheese, broil for 5-10 minutes until warm.
