Sysco Kitchen: The Lift's Super Food Salad

Super Food Salad

Ingredients:
6 oz piece of salmon cooked to top each salad plate.
Kale Vegetable Blend – can be bought at most grocery stores.  If you can’t find the blend, it is a salad blend made of broccoli, Brussels sprouts, green cabbage, kale, and chicory.
Toss salad mix with dressing.

Dressing:
2 T. fresh lime juice
1 clove garlic
1 ¼ T. rice wine vinegar
½ t. Dijon mustard
1 T. brown sugar
2 T rough chopped cilantro
¾ t. Sriracha
¾ c. olive oil
S&P to taste

Directions:
1.       Place garlic in food processor and pulse.
2.       Add Dijon. Brown sugar, rice wine vinegar and srirach and half the olive oil.  Mix together well.
3.       Slowly add the 2nd half of olive oil to emulsify and add cilantro, finish with S&P.
