3 Tasty Holiday Latkes Recipes

Not sure what dish to bring to your next holiday gathering? How about preparing a treat guaranteed to make even the Grinch flash you a grin: latkes! Not only are these potato pancakes a certified crowd-pleaser, but they’re also pretty easy to make. Below we offer you three twists to take on this Hanukkah classic.

 

1. Traditional Potato Latkes Recipe

 

Ingredients

1 bag frozen potatoes/shredded hash browns

1 cup sweet onion, finely diced

2 eggs, beaten

Salt

1 teaspoon black pepper

1/4 teaspoon baking powder

3 tablespoons flour or matzo meal

Jar of queso

Diced tomato

Diced jalapeno

Black beans

Chopped chives for garnish

Sour cream

Chopped black olives (optional)

Chopped avocado (optional)

Cilantro for garnish

How To Make It:

Start by spraying your waffle iron with a non-stick cooking spray. Then combine all your ingredients in a large bowl. Next, scoop the mixture onto the hot waffle iron, covering the entire disc no more than half an inch thick. Now cook on high until golden brown, which should take about 8-10 minutes. When they’re done, remove your latkes and cut them into quarters. Finally, combine the jar of queso with the beans, jalapenos, and any ingredients you’d like! All that’s left for you to do from there is heat and serve. Voila!

2. Gluten-Free Veggie Latkes

Ingredients

1 bag shredded frozen potatoes/hash browns

2 cups chopped veggies – choose any combination that floats your boat!

1/2 cup diced sweet onion

2 eggs, beaten

1/2 teaspoon baking powder

1/4 cup gluten-free flour ( You can substitute with other gluten-free flours like potato starch, chickpea flour, coconut flour, etc).

Salt

1 tablespoon smoked paprika

1 tablespoon chili powder

How To Make It:

Preheat your oven to 425°F. After draining excess potato liquid using paper towels, mix all the ingredients in a large bowl. Your mixture should consist of 3/4 potatoes and 1/4 vegetables, but feel free to throw in any many veggies as you wish.

 

Then take two baking sheets and spray them with non-stick gluten-free cooking oil, like canola oil. Now scoop out your latke mixture and flatten with hand. As you flatten the latkes some of the moisture will come out, so make sure you do this over a towel or sink. As you place your flattened latkes on the baking sheet, ensure to leave just a little space between each one. Bake for 15 minutes, turn the latkes over, then bake an additional 15 minutes until golden brown. Remove and place on paper towels to absorb the excess oil. Serve with regular apple sauce and enjoy!

3. Sweet Coconut Latkes

Ingredients

1 bag shredded frozen potatoes/hash browns

1 cup unsweetened shredded coconut

2 eggs, beaten

2 tablespoons coconut or all-purpose flour

2 tablespoons granulated sugar

½ teaspoon salt

Coconut oil cooking spray

Cinnamon apple sauce

Mascarpone

How To Make It

Start by spraying your muffin tins with coconut oil cooking spray. Then combine the potatoes with all the other ingredients. Fill the tins a little more than half way, pressing the potato mixture down in the tin slightly to combine. Bake at 400 degrees for 35 to 45 minutes, until the tops are golden brown. Once cooled, remove from the tins and top with a spoonful of cinnamon applesauce and mascarpone sprinkled with cinnamon.
