Celebrating National Waffle Day in a thrifty way
Did you know Monday March 25th is National Waffle Day? Jessica Hacker does, and she has the perfect waffle meal for your family.
White Chicken Chili & Corn Bread Waffles: $8.80 ($1.46 a person)
Price Breakdown:
Chicken $5.00 (you can always get a whole chicken for around $.99 lb)
Dried Beans $.80 (dried beans $.80 lb compared to $.60 a can, 1lb of dried= 4 cans cooked)
Cream Cheese $1.00
Verde Sauce $1.50
Corn Bread $.50 (homemade or Jiffy is extremely cheap and comparable in price)
WHITE CHICKEN CHILI
Ingredients
1 medium onion, chopped
2 cloves garlic, minced
1 Whole Chicken or 4 boneless skinless chicken
2 cans chicken broth
1 Jar of Verde Sauce
2 teaspoons ground cumin
1lb (2 Cups) of dried Great Northern or Pinto beans, soaked over night
1 (8oz) brick of Cream Cheese
Sliced Jalapeno & Sour Cream, optional
Directions
In a crockpot add onion, garlic, chicken, broth, cumin and soaked beans.
Cook on low for at least 6 hours or high for 4.
Remove cooked chicken and shred, place back into the crockpot.
Add verde sauce and cream cheese brick. Allow to cook until the cream cheese has melted and the soup has thickened.
HOMEMADE CORNBREAD WAFFLES
Ingredients
1 cup of yellow cornmeal
1 cup of flour
1/2 cup white sugar
1 teaspoon of baking powder
1 teaspoon of salt
2 eggs
½ cup of vegetable oil
milk- just enough to make the batter pourable
Directions
Mix together all ingredients except the milk.
After ingredients are mixed well and the clumps are gone, slowly whisk in the milk until a smooth pourable texture is achieved (like a pancake batter)
Prep your waffle maker, pour a small amount of batter onto the waffle maker and cook until golden brown.
