 St. Patty's Day came a little early with Jessica Hacker and Thrifty Thursday.  Use these recipes to make the lucky creations you saw us try on Good Morning Idaho.

Homemade Rainbow Pancakes
1 ½ Cups Flour
3 ½ Teaspoon Baking Powder
½ Teaspoon Salt
1 Tablespoon Sugar
1 ¼ Cup of Milk
1 Egg
3 Tablespoons Butter, melted
Food Coloring of choice

Directions:
In a large bowl, sift together the dry ingredients.
In a separate bowl mix together the wet ingredients
Make a well in the center of the dry ingredients and gently pour the wet mixture.
Mix to combine until smooth.
Separate evenly into zip bags and add food coloring to desired color
Heat a griddle or pan to medium high heat.
Pour desired amount of batter onto a hot griddle, once the pancake starts to bubble flip to cook the other side.


Leprechaun Juice
Milk
Green Food Coloring


Rainbow Fruit Tray
Red - Strawberries
Orange – Mandarin Oranges, Cantaloupe
Yellow - Pineapple
Green – Green Grapes, Honeydew
Blue – Blueberries
Purple – Purple Grapes
Clouds – Mini Marshmallows


Chocolate Mint Cookie Trifle
1 Package of Mint Oreos or Thin Min Girl Scout Cookies
1 Package of Vanilla or Cheesecake Pudding
Green Food Coloring

Directions:
Prepare the pudding per package instructions.
Add green food coloring, about 5 drops (add more for a more intense color)
Rough chop or crush the chocolate mint cookies
Layer the two ingredients in a large trifle dish or individual glasses, starting with the crushed cookies and ending with the cookies.
Cover and refrigerate for a few hours, this will allow the cookies to absorb some of the delicious pudding! If you can!
